Delicious Donut Muffins!


This recipe was so easy and so GOOD! I made these after brunch and put them out to snack on over the weekend, and between the three of us they disappeared in a matter of hours. They are delicious, and were very quick to make and a fun project to do with the kiddo's in the kitchen. Kent had a great time rolling the tops in butter and coating them in cinnamon sugar!

These are great with breakfast or as a snack. You can use butter or margarine - I used margarine and it worked great. I don't think you need much butter for dipping the tops at the end, but you can always melt more if you run out or need extra (like if you want to toss the whole thing in butter and cinnamon sugar, and not just the tops!) The only thing I changed was to decrease the amount of nutmeg from 3/4 tsp to 1/2 tsp based on some of the reviews I read. I thought with 1/2 tsp the flavor was perfect - noticeable but not overpowering. Also, for each step of mixing I used a small wire whisk to combine ingredients and that worked well.

Distributed the batter in a mini muffin pan.

Baked up for 15 minutes.

Popped them all out and got them ready for dipping!

Kent twirled the tops in melted margarine, then rolled in cinnamon sugar.

Ingredients
1/2 cup white sugar
1/4 cup margarine, melted
1/2 teaspoon ground nutmeg
1/2 cup milk
1 teaspoon baking powder
1 cup all-purpose flour

Topping:
1/8 cup margarine, melted
1/4 cup white sugar
1/2 teaspoon ground cinnamon

Directions
  1. Preheat oven to 375 degrees F. Grease a 24 mini-muffin cups.
  2. Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
  3. Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
  4. While muffins are baking, place 1/8 cup of melted margarine in a bowl. In a separate bowl, mix together 1/4 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture. Let cool and serve (or do what we did and dig in while they're still warm!) :)
